Sweet and Sour Meatballs
1 tablespoon butter
Medium green pepper sliced thinly
1 medium onion sliced thinly
1 clove garlic minced
Melt butter and sauté vegetables. Set aside.
Combine:
3/4 cup oats
1 lb hamburger
2 eggs
1 teaspoon salt
1 teaspoon pepper
Mix ingredients. Make into 2-inch balls. Cook in melted butter. (Or
cook 30 min in oven at 350°) Pour off grease.
Add:
20 oz. Pineapple chunks
1 cup extra pineapple juice
1/2 cup brown sugar
1/2 cup water
cover and cook for 10 minutes.
Combine:
2 tablespoon cornstarch
1/4 teaspoon ginger
1/3 vinegar
3 tablespoon soy sauce
Stir into meatballs. Cook while stirring until thickened. Add
vegetables. Heat thoroughly. Serve over white rice.

We love anything sweet and sour. I bet this sauce would be yummy with any meat!
I bet it would! Chicken would be good! Dustyn loves the meatballs with LOTS of pepper... so we haven't tried it with anything else. This is his FAVORITE meal. Well tied with Curry.
Oh my gosh, I madet his today and it is soooooooo good. Mike usually isn't a big fan of new recipe's I try, but he totally loved this one.
